- Get rid of the soil on the cap and at the base of the stem with the help of a brush. You can also use a damp cloth.
- Remove the spines under the hat.
- Slice your Hedgehog mushroom to check if they are wormy .

Hedgehog mushrooms can be eaten cooked, here are some tips for cooking them well:
- You can blanch them or cook them directly in fat. (butter + neutral oil)
- To blanch them, simply bring a pot of water to the boil. When water start boiling, put your Hedgehog mushrooms and wait for the water to boil again before removing them.
- The cooking time for Hedgehog mushrooms should be 10 minutes if you sauté them in fat.
