Do Mushrooms Have To Be Pressure Canned?
Yes, mushrooms must be pressure canned. It is this pressure that will guarantee the rise in temperature and subsequently the good sealing of your jars.
Do You Have To Cook Mushrooms Before Canning?
You don’t have to cook your mushrooms before canning them. Because canning will sufficiently cook your mushrooms.
However, cooking the mushrooms with original recipes before canning them can improve the preservation of your mushrooms. Indeed, if your recipe has an acid pH, then you reduce the risk of botulism (serious, sometimes fatal illness that occurs after eating food that has not been canned properly)
How To Can Your Mushrooms: The Process
- Clean your mushrooms. Pass them quickly under water, dry them and cut them into cubes.
- Fill a large saucepan with salted water, add lemon juice and bring to a boil. Once the water is boiling, add the mushrooms and cook them for 3 to 4 minutes. Drain them, but keep the cooking water. Let your mushrooms cool.
- Boil the water again, adding cloves, bay leaves and peppercorns. Place the mushrooms in jars and cover them with the cooking water.
- Close the jars, put them in a large pressure cooker, wrap them in a cloth so that they don’t bump into each other during the process, cover the jars with 2 cm of cold water, and put your pressure cooker on medium heat for about an hour and a half.
- Let the water cool completely before taking out your jars, label them and store them in a cool, dark place.

How Long To Can Mushrooms?
Your mushrooms must be canned for at least one hour and a half to ensure the elimination of bacteria contained in the jar.
How Long Does Jarred Mushrooms Last?
Properly stored, jarred mushrooms will generally stay at best quality for about 3 to 5 years.
