How To Dry Porcini Mushrooms

The ideal way to dry your porcini mushrooms is to do it with a dehydrator or an oven set to low temperatures.

Indeed, to properly dehydrate your porcini mushrooms in your oven or dehydrator, opt for a low temperature of around 113 °F for around 6 hours! To dry them optimally, cut your boletes into slices no more than 1 cm thick. In addition, during drying, check them every 2 hours on your grid and add time if drying is not finished! Adapt this time according to the quantity of porcini mushrooms you have! The boletus must be light and dry but not crumbly!

Finally, keep in mind that good drying is done at low temperatures and over time! Because drying your boletes quickly would involve high temperatures which would cook and damage them.

Open-air Drying

To dry porcini mushrooms this way, it is best to cut them into 1 cm slices using a clean knife. Then you can dry them on a line or on a wide-mesh shelf. In addition, drying should be done in a room with low humidity and a temperature of around 20°C. How To Rehydrate Dried Porcini Mushrooms?

  • 1 – Place your porcini mushrooms in a bowl – Place your dried porcini mushrooms in a small bowl.
  • 2 – Pour boiling water over – Add the equivalent of a glass of boiling water to your dried porcini mushrooms.
  • 3 – Wrap your bowl – place plastic wrap over your bowl and wait about twenty minutes!
  • 4 – Reserve your rehydrated porcini mushrooms – once rehydrated, place them in a colander and carefully keep the rehydration juice.
  • 5 – Wet your cooking with the rehydration juice – when cooking your porcini mushrooms in a little fat, you can gradually deglaze your preparation with the rehydration juice !
